 Are you ready for summer? It seems is going to be a HOT one and I want to share with you a recipe from Puerto Rico to enjoy during the hot days. This delicious Limber (how we called it). Puerto Rican Limber comes in so many different flavors, Tamarindo, Cherri, Mango, Coco Piña and more. My favorite is the coconut cream one!
_________________________________________________________________________ Easy Recipe Time: 6 to 8 hours (preferably overnight) Ingredients: 1. 1 – can of Coco Lopez Crema de coco 2. 1 – can of Evaporated milk 3. 1 – can of whole Coconut Milk 4. Vanilla Extract 5. Cinnamon 6. ½ cup of water 7. Sugar to taste 8. A touch of salt 9. Shredded coconuts/ or chunks (optional) Materials: 1. Blender 2. Plastic cups (9oz) or popsicle trays (kids love the popsicle trays) 3. Free up space in your freezer You’ll most likely need 5 to 6 cups, set them to the side and have them ready. Place all of your ingredients into the blender, except your shredded or coconut chunks. Blend well. Pour your mix into each cup and add the shredded or coconut chunks. Top with a dash of cinnamon and freeze for 6 hours. Its best to leave overnight and enjoy the next day.

 We just came back from our amazing cruise adventure to Alaska, and we had the most amazing time. This was our sixth trip to Alaska, and we love it every time. There is so much to explore and see. This time we had a Glacier View cruise, but it was canceled due to weather (this happens quite often in Alaska), so we decided to add another port excursion in Juneau, and we were not disappointed. We paddled in a canoe to the Mendenhall Glacier and Nugget Falls, and it was the most amazing experience. In Skagway, we did a sailing boat adventure, and WOW, two and a half hours of amazing views. During our time in Ketchikan, we explored on our own and had some pool time (the weather was perfect). |
